If you haven’t heard about Bubble Tea yet you soon well. Come next month, Bubbleology, the UK’s first authentic Bubble Tea café, will open on Rupert Street in the heart of Soho.
Originating in the 1980s, from a single stall in Taipei’s night market, the drink has become so popular that there are now over 8000 Bubble Tea cafes in Taiwan. But the craze hasn’t stopped there and now has a huge following already in Chinatown NYC and throughout the USA, Australia, Canada and Asia.
Served warm or cool, Bubble Tea drinks have a red, white or green tea base infused with delicious fruit flavourings with those key Tapioca pearls lying at the bottom. Nicknamed ‘Boba’, they have an almost ‘gummy bear’ texture and a delicious caramel taste than infuses its way into the tea itself. They are also zero fat which makes Bubble Tea a healthy (ish) alternative to cream-ridden frappuccino.
Bubble Tea making is a pretty exact science requiring precise measurements and temperature control so the Bubbleology team has trained under Taiwanese Bubble masters to ensure authenticity. The teas come in 13 varieties and are either fruit or milk based. The former include Lychee Green Tea, Kumquat Red Tea and Ginger Red Tea and the milk versions feature Coconut, Almond and Honey dew flavours. They are drunk with a large brightly coloured straw to suck up those bubble pearls.
With its black and neon décor, exposed brickwork and scientific diagrams explaining the tea creation process, the cafe interior recalls the lab of a mad scientist. What’s more, guests will be served by ‘Bubbleologists’ dressed in wacky lab coats. Open til midnight, you can unleash your inner child and let it stay up past its bedtime as well.
