AQUA NUEVA: La Matanza

aqua nueva are offering the lucky little rascals of London the chance to ‘go the whole hog’ this winter!

By honouring the Spanish tradition, ‘La Matanza’, aqua nueva have created a new, 6 course, sharing menu which incorporates a ‘nose to tail’ style of eating.

The tradition of La Matanza is deep rooted in many rural areas of Spain and involves the slaughter, preparation and consumption of a pig in a way which will let guests try all the best bits.

Typically this was a method for surviving the year ahead, whereby family and communities would come together at the end of every winter to help prepare the meat in various ways. It’s also of course a very sustainable way of eating as the entire pig is prepared and nothing is wasted – an added feel good bonus!

On our visit we ‘went the whole hog’ and tried all courses on the menu, however diet abiding guests are free to just opt for 1 or 3 course if they fancy.

We started pigging out (sorry) With dishes such as the skin, “La Piel,” a dish of crispy pork skin with chilli, lime salsa, and then moved onto the back “”La Espalda” slow cooked paprika-glazed ribs and the grand finale “from head to tail” which included trotters, head and tail terrine with a butter beans vinaigrette.

Marking the end of the winter “The Pig Menu” offers sustainable delicacies from different parts of the pig, which show off what a truly versatile and flavoursome meat pork is.

The Pig Menu is available from Monday 11th January – Saturday 5th
March 2016.
