With over 10 years experience, Jonay honed his culinary craft in some of Spain’s leading Michelin-starred restaurants, including La Terraza del Casino and El Chaflán in Madrid and El Raco de Can Fabes in Barcelona. Originally from the Canary Islands, his cooking style is distinguished by innovation, inventiveness and a respect for tradition.
Jonay Armas, The Principal Executive Chef has curated different European-inspired menus, each containing a series of mini visual and mouth-watering creations. The menus are broken down into brunch; lunch and his night show off menu’s called The Principal Experience, Cuento Corto and Degustation (Vegetarian); all of which will definitely cause the unbuttoning of belts! First memory of food?
I have so many good memories of food from my childhood! It’s hard to say which was the first, but I do recall spending a lot of time with my mother in the kitchen. Back home, cooking was very much a family affair. My whole family would get involved and my mother even grew her own vegetables in the garden. I learned a lot from her just by observing and helping out.

Yardbird in Hong Kong.
What was the last thing that made you stop and stare?
One night after dinner at Yardbird, I noticed a small antique shop tucked away near the restaurant. I literally stopped and stared at it for ages, stuff like that you just don’t find in Hong Kong. There was a range of different things inside, from vintage furniture pieces to quirky items like glasses, old suitcases, used instruments – things you’d probably never need but are just fun and silly.
