As winter draws closer the appeal of a sun-drenched lunch, in a small fishing village near Venice has never been quite so strong. Sipping white wine, whilst enjoying fresh and locally caught fish is a delight we rarely experience in London. However we have been told of a man who is about to change all of that. Kurt Zdesar, the mastermind behind Bouillabaisse has skilfully combined delicious produce with sustainable fishing practices and has brought it to London’s restaurant heartland.
Bouillabaisse has been inspired by first hand conversations with fishing communities around the globe. Founder Zdesar, who launched Chotto Matte in Soho in 2014 and brought Nobu to London as Director for Operations, has distilled the very best of his extensive travel to coastal communities.
Kurt has said “Bouillabaisse is a celebration of my lifetime of travel and showcases my love affair with seafood. Over the last 20 years I have travelled the world coming across some of the most incredible dishes which I’ve brought to London where they have been tweaked and perfected to create a menu that is a collection of my best experiences on a plate.”
The menu is the work of a team of Executive Chefs, Jordan Sclare most recently of Chotto Matte and previously with Nobu London and Restaurant Gordon Ramsay. Sclare travelled with Zdesar to retrace his favourite international seaside spots, combines traditional and contemporary coastal cooking techniques whilst ensuring the fish and seafood is central to each dish.
Headliners on the menu include Athenian inspired crisp Seppia Nero with Oregano and Orange; Snow Crab Cakes with Garlic and Herb Salsa; the signature Bouillabaisse is the highest quality seasonal seafood.
Alongside this guests will be encouraged to delve into the wine list, which has been cunningly sourced, featuring a selection of wines from coastal vineyards around the world.
Kurt is set to open further need-to-know restaurants this year, with sites confirmed for other concepts on Mortimer Street, Chiltern Street, and Wimpole Street.
