Mono sensory experiences are over, everyone wants taste to run with smell and for sight to set the tone.
London’s latest multi-sensory extravagance has been created by aqua kyoto’s celebrated head chef Paul Greening who has come up with the beautiful ‘Food as Art’ menu which draws inspiration from three contemporary Japanese artists.
Our pal Paul has taken his signature style of highly detailed, intriguing and beautiful creations one step further with a selection of dishes inspired by contemporary artist, Yayoi Kusama’s distinctive polka dots. He has also been inspire by the bold bright abstracts of Tsuruko Yamakazi and the delicate floral motifs of Ryoko Aoki.
On our visit we first sampled the Bitoruto Sarada, a Soya and Baby Beetroot Salad with Roasted Pine Nuts and Sudachi Honey Plum Wine and we also tried a tender Whitefish, Shiso Leaf Maki and Spicy Tomato Paper.
For the main event my guest enjoyed the delicious yet healthy dish of Wagyu Beef with full bodied Red Wine Teriyaki on a Nest of Rice and Herbs, whilst I enjoyed the Lacquered Salmon with Miso Sauce, Edamame and Crispy Ohba Leaf which was very fresh and light.
Capping off the masterfeast was a delicate dessert; a Japanese Rhubarb Crème and Sesame Cake with a fragrant Rose Vanilla Ice Cream and Rhubarb Oil.
As ever Paul has created these dishes to look as good as they taste – they are as intricately layered and skilfully created on the plate as they are on the tongue.
Aqua kyoto’s ‘Food as Art’ menu will be available for lunch Monday – Saturday, all evening for dinner Monday –Thursday and pre-theatre Friday- Saturday. Priced at £29, the menu will be available between 1st September and 30th November and includes a starter, main, dessert and cocktail.
Available from 1st September – 30th November, the menu has also coincided with FRIEZE Art Fair in
October, where all three artists were exhibited.
